Ground Lamb Recipes Will knock Your Socks Off

Tandori Lamb Burgers
Ingredients:
2 pounds ground lamb, preferably grassfed
1 onion, finely diced
1 Tablespoon garlic
3 Tablespoons Tandori seasoning
2 cups shredded mozzarella cheese
8 flour tortillas
Procedure:
Mix all ingredients except tortillas and form into 1/4 pound patties. Grill over direct heat until temperature reaches 165° F. Heat tortillas on grill. Place burgers on grilled tortillas and serve open faced.
Tips: The Tandori seasoning dyes the meat and the clear liquid appears to be bloody. This burger can be easily overcooked so be sure to use a thermometer.
Gyro Party Starters
Ingredients:
2 pounds ground lamb, preferably grassfed
3 Tablespoons Penzey's Greek Seasoning
2 cucumbers, cut into 14 inch slices
1 loaf party bread
3 cups Tazatziki sauce
Procedure:
Mix Greek seasoning with ground lamb. Form into one inch meatballs. Place on grill and cook until temperature reaches 165° F. Place snack bread on tray and lay slices of cucumber on bread. Place meatball on top of cucumbers. Pipe TzatZiki sauce on top of meatballs.
Tip: If ground lamb is very lean, as it often is in grassfed lamb, add two egg whites to help bind the mixture.
