Want Variety? Substitute Lamburger for Hamburger

Yes, indeed--you may generally substitute lamburger for any hamburger or ground beef recipe. But don't take my word for it. As the old saying goes, "the proof is in the pudding. . ."

Use grassfed lamb if you can--the meat will be leaner, not so greasy, and of course, healthier.

Lamb Patties With Roquefort Sauce

Ingredients:

1 pound ground lamb
1 Tablespoon oil
1/2 cup hot water
1/4 cup Roquefort cheese, crumbled
3 Tablespoons butter
1 Tablespoon mustard
5 or 6 drops Worcestershire Sauce
Salt and pepper to taste

Procedure:

Form meat into 6 or 8 patties. Brown lightly on both sides in lightly oiled skillet or frying pan. Add hot tap water. Cover and cook on low heat for 10 minutes.

Combine cheese, melted butter, mustard, Worcestershire Sauce, salt and pepper. Spread this mixture over the lamb patties. Cover and cook for about 5 minutes.

Serves 4-5

Chili Con Carne

Chili con carne is an old favorite usually made with beef. It may be even more of a favorite with this ground lamb recipe.

Ingredients:

1 tablespoon butter
1 pound ground lamb
1/2 cup diced onion
1 can pork and beans
2 cups tomato soup
1 teaspoon salt
1/4 to 1/2 teaspoon chili powder

Procedure:

Melt butter in heavy skillet. Add meat and onion. Brown both, turning frequently. (The meat, not you!)

Add all remaining ingredients Stir and cover. Cook on low heat for 20 to 25 minutes. Stir occasionally.

Serves four normal appetites, two if they're teenage boys.
