Potato Pancake Recipes Strike Breakfast Boredom Dead

Ingredients:

4 medium potatoes
6 eggs from grassfed hens
3 Tablespoons flour
1 ½ to 2 teaspoons salt
4 teaspoons grated or chopped onion

Procedure:

Beat eggs in a large mixing bowl. Grate potatoes and mix into beaten eggs. Add flour, salt and onion; stir.

Melt butter on skillet. Spoon mixture onto hot skillet and form into round potato pancakes. Make the pancakes about ¾ in thick, but no more. If they are too thick, they turn out crisp on the outside and undone in the middle. Not tasty! Brown on both sides until crisp. (This usually takes about 3 minutes or so depending on temperature of skillet and how thick the pancakes).

Notes: Use regular eggs if you can’t find eggs from free range hens. Eggs from free-range hens are healthier, tastier and more colorful. Natural eggs (as opposed to eggs from caged hens) help restore health and the joys of cooking and eating. Even kids can notice the difference.

Notice this is a vegan pancake recipe. No milk added.

Various toppings add variety. For this particular pancake recipe I like wild honey for a simple topping. Applesauce, blueberries, strawberries, raspberries, sorghum, and any mixture of fruit and sweeteners may be used. One of our teenagers pours ketchup on his pancakes. Imagination is queen when it comes to toppings!
