Two Recipes for Ground Beef That Are Fun and Tasty
Recipes for ground beef at your fingertips!
This first of the two recipes for ground beef below were adapted from a meat loaf recipe submitted to the Iowa Farm Bureau Spokesman by Gladys Fisher from Kalona, Iowa. The artistic cheese sets it apart from all other ground beef recipes.
Miniature Meat Loaf Recipe
Ingredients:
1-pound ground beef, preferably grass-fed
1 egg, preferably from free-range hen
1/4 cup mustard
1 Tablespoons molasses
1-cup soft bread crumbs
Sliced American cheese
Procedure:
Brown the ground beef in a heavy skillet. Pour off any grease. (Note: if you use grassfed ground beef, there may be little or no fat.) Beat the egg and combine it with the mustard and molasses. Add the cooked ground beef and the breadcrumbs and mix all together. Spoon the mixture into six or eight greased muffin cups. Bake for about 25 minutes at 400 F.
Use a cookie cutter to cut various shapes (stars, moon, snowflakes, etc.) from the cheese. Top each miniature loaf with the artistic cheese-shape. Fun! Serves 4-6.
Tasty Ground Beef Recipe
Ingredients:
1 1/2 pounds ground beef, preferably from grassfed beef
2 eggs, beaten, preferably from free-range hens
¾-cup milk
2/3 cup bread crumbs
2 tablespoons onions
½-teaspoon sage
½ cup sliced mushrooms
Procedure:
Mix all the above ingredients together. Place into a meat loaf pan. Bake 50-60 minutes in pre-heated oven at 350 F. Remove from oven; pour off any grease. (If you use grassfed ground beef, there may be little or no grease. Obviously, grassfed is your healthful choice.) Then mix the following topping ingredients:
¼-cup ketchup
2 Tablespoons brown sugar
1-teaspoon dry mustard
1/4 teaspoon nutmeg
1/4 cup shredded cheese
Pour all topping ingredients (except cheese) on top of the meat loaf. Finally, sprinkle ¼ cup shredded cheese on top. Bake until the cheese melts.
This delightful ground beef recipe works well for families. Serves 8.
